  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened

  • ¼ cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (or plain Greek yogurt)
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper if desired.
  2. Mash the bananas in a medium bowl until mostly smooth but still a bit chunky.
  3. In another bowl, sift together the flour, baking soda, and salt.
  4. Using an electric mixer, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs one at a time, then mix in the vanilla extract.
  6. Alternate adding the flour mixture and sour cream to the butter mixture, beginning and ending with the flour. Fold gently with a rubber spatula to keep the batter light.
  7. Fold in the mashed bananas gently until evenly mixed.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. If browning too fast, cover loosely with foil halfway through baking.
  10. Cool the cake in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. For the frosting, beat the cream cheese and butter together until smooth.
  12. Gradually add powdered sugar and vanilla extract, beating until fluffy, about 3 minutes. Stir in lemon juice if using.
  13. Once the cake is fully cooled, spread the cream cheese frosting evenly over the top.
  14. If frosting is too soft, chill in the fridge for 15 minutes before spreading.
