  • Norwegian salmon fillets (about 6 oz / 170 g each, skin-on for best texture)
  • 1 tablespoon olive oil (extra virgin preferred)
  • Salt and freshly ground black pepper (to taste)
  • 2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)
  • ½ cup (120 ml) Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced (optional)
  • 1 tablespoon capers (optional)
  • 1 tablespoon butter

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Let rest at room temperature for 10 minutes.
  2. In a small bowl, combine Greek yogurt, mayonnaise, chopped dill, lemon juice, minced garlic, and capers if using. Stir until smooth. Adjust salt or lemon juice to taste. Chill in the fridge.
  3. Heat olive oil in a non-stick skillet over medium-high heat until shimmering (about 2 minutes). Add butter.
  4. Place salmon fillets skin-side down in the pan. Press gently with a spatula to prevent curling. Cook undisturbed for 4-5 minutes to crisp the skin.
  5. Flip the fillets carefully and cook for another 3-4 minutes until salmon is opaque and flakes easily. Internal temperature should reach 125°F (52°C) for medium-rare.
  6. Remove salmon from pan and let rest for 2 minutes. Serve with a generous dollop of creamy dill sauce on top or on the side.

Notes

If fillets are thick, finish in a preheated 400°F oven for 3-5 minutes after searing. Avoid overcrowding the pan to maintain heat and crisp skin. Use room temperature salmon for even cooking. Adjust sauce consistency with water or lemon juice if too thick. Butter can burn quickly if heat is too high.
