  • 1 pound carrots, peeled and cut into fry-shaped sticks (about 1/2-inch thick and 34 inches long)
  • 2 tablespoons olive oil (or avocado oil)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs (or a mix of oregano, thyme, and basil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese (freshly grated preferred)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1/2 cup mayonnaise (regular, light, or vegan)
  • 12 tablespoons Sriracha sauce (to taste)
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 small garlic clove, minced (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Peel carrots and cut into fry-shaped sticks, about 1/2-inch thick and 3-4 inches long. Pat dry with a paper towel.
  3. In a large mixing bowl, toss carrot sticks with olive oil. Sprinkle with cornstarch, garlic powder, Italian herbs, salt, and black pepper. Toss until evenly coated.
  4. Add grated Parmesan cheese and toss again to coat.
  5. Arrange carrot fries in a single layer on the prepared baking sheet, leaving space between each fry.
  6. Bake for 20-24 minutes, flipping halfway through, until edges are golden and fries are tender but crisp.
  7. While fries bake, whisk together mayonnaise, Sriracha, lime juice, and minced garlic in a small bowl. Season with salt and pepper to taste.
  8. Transfer baked carrot fries to a serving plate, garnish with chopped parsley, and serve hot with Sriracha aioli for dipping.

Notes

For extra crispiness, broil fries for 1-2 minutes at the end. Pat carrots dry before coating. Use nutritional yeast for a vegan version. Air fryer option: cook at 400°F for 15-18 minutes, shaking halfway. Avoid overcrowding the pan for best results.
