  • ¾ cup (150g) sugar
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: chocolate chips or melted chocolate for dipping or drizzling

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine shredded coconut, sugar, and a pinch of salt. Stir until evenly mixed.
  3. In a separate bowl, whisk egg whites until frothy. Add vanilla extract and continue whisking until slightly thickened.
  4. Pour the egg white mixture into the bowl with the shredded coconut. Stir gently until everything is evenly coated.
  5. Using a cookie scoop or two spoons, portion out the mixture onto the prepared baking sheet, leaving space between each macaroon.
  6. Bake for 20–25 minutes, or until the macarons are golden brown on the edges.
  7. Remove the baking sheet from the oven and let the macarons cool for 5 minutes before transferring them to a wire rack to cool completely.
