Ingredients

  • Bone-in ham, fully cooked (about 6 to 8 pounds)
  • Honey (½ cup)
  • Brown sugar (½ cup, packed)
  • Dijon mustard (2 tablespoons)
  • Pineapple slices (1 can, about 8 slices in juice)
  • Whole cloves (12-15, optional)
  • Ground cinnamon (½ teaspoon)
  • Butter (2 tablespoons, melted)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about ¼ inch deep, spacing cuts 1 inch apart.
  3. Stud the ham with whole cloves by pushing a clove into the center of each diamond.
  4. Place the ham on a rack in your roasting pan. Pour about ½ cup of pineapple juice around the bottom to keep the environment moist and infuse flavor.
  5. In a small bowl, whisk together honey, brown sugar, Dijon mustard, melted butter, and cinnamon until smooth.
  6. Brush a generous layer of glaze over the ham. Cover loosely with foil to prevent the glaze from burning at first.
  7. Bake the ham for about 1 hour and 20 minutes (or about 10-12 minutes per pound), basting with the remaining glaze every 20 minutes. Remove the foil during the last 20 minutes to let the glaze caramelize and thicken.
  8. About 15 minutes before the ham is done, arrange pineapple slices on top, securing them with toothpicks if needed. Brush pineapple with leftover glaze and return to oven uncovered.
  9. Check the ham’s internal temperature with a meat thermometer; it should reach 140°F (60°C).
  10. Remove ham from oven and let rest 15 minutes before slicing.

Notes

If glaze starts to burn, tent the ham with foil and lower oven temperature slightly. Use fresh pineapple juice when possible for better flavor and tenderizing. Rest ham before slicing to lock in juices. For dairy-free glaze, substitute butter with coconut oil. Adjust cooking time if using boneless ham.
