  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup graham crackers, crushed into fine crumbs
  • 6 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. Crush the graham crackers into fine crumbs using a food processor. Mix them with melted butter until the mixture resembles wet sand. Press about a tablespoon of the mixture into the bottom of each muffin liner. Use the back of a spoon to flatten it. Bake for 5 minutes, then let cool.
  3. Beat the softened cream cheese with an electric mixer until smooth. Add granulated sugar and continue mixing. Beat in eggs one at a time, then add heavy cream, vanilla extract, and a pinch of salt. Mix until fully combined and creamy.
  4. Spoon the cheesecake mixture evenly on top of the cooled crusts. Each liner should be about ¾ full.
  5. Place the muffin tin in the oven and bake for 18-22 minutes, or until the centers are set but slightly jiggly. Remove from the oven and let cool completely at room temperature.
  6. Once cooled, transfer the cheesecakes to the refrigerator for at least 2 hours (or overnight) to firm up.
  7. When ready to serve, sprinkle a thin layer of granulated sugar on top of each cheesecake. Use a kitchen torch to caramelize the sugar until golden and crisp. If using a broiler, place the cheesecakes under the broiler for 1-2 minutes, watching closely to avoid burning.
