  • 3 oz packet pink flavored gelatin (e.g., Jell-O)
  • 1 cup (240 ml) dry or extra dry prosecco
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 2 tablespoons granulated sugar (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh raspberries or strawberries (optional, for garnish)

Instructions

  1. Bring 1 cup (240 ml) of water to a rolling boil and pour into a mixing bowl.
  2. Add the entire 3 oz packet of pink flavored gelatin to the boiling water. Stir briskly for about 2 minutes until fully dissolved with no granules visible.
  3. Stir in 2 tablespoons of granulated sugar and 1 tablespoon of fresh lemon juice. Taste carefully and add more sugar if needed.
  4. Pour in 1/2 cup (120 ml) cold water, stirring gently to cool the mixture slightly.
  5. Slowly add 1 cup (240 ml) of cold prosecco, stirring lightly to combine without losing too much fizz.
  6. Immediately ladle the mixture into prepared shot glasses or silicone molds, filling each about 3/4 full.
  7. Place the molds on a flat tray or plate and chill in the refrigerator for at least 3 hours, preferably overnight, until fully set and jiggly.
  8. Just before serving, top each jello shot with a fresh raspberry or a small slice of strawberry.

Notes

Whisk gelatin vigorously after adding hot water to prevent clumps. Add prosecco slowly and stir gently to retain fizz. Chill shots flat to ensure even setting. Use silicone molds or reusable shot glasses for easy removal. Can substitute prosecco with sparkling water or soda for alcohol-free version.
