A quick and easy recipe for garlic butter lobster tails perfect for a romantic dinner for two, featuring a rich, garlicky butter sauce and tender lobster meat.

Ingredients

Scale
  • 2 lobster tails (about 68 ounces / 170227 grams each, fresh or thawed frozen)
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat the broiler to high and position the oven rack about 6 inches (15 cm) from the heat source.
  2. Using kitchen shears, cut down the top shell of each lobster tail lengthwise, stopping just before the tail fin. Gently pry apart the shell and lift the meat, resting it on top of the shell for even cooking (butterflying).
  3. In a small bowl, melt the butter. Stir in minced garlic, lemon juice, smoked paprika, salt, and pepper until well combined.
  4. Brush about half of the garlic butter mixture generously over the exposed lobster meat. Save the rest for basting during cooking.
  5. Place the lobster tails on a baking sheet or broiler pan and slide under the broiler. Cook for 6-8 minutes, basting with the remaining garlic butter every 2-3 minutes. The lobster meat should turn opaque and firm with a slight golden edge.
  6. Check for doneness; the internal temperature should be about 135°F (57°C). Avoid overcooking to keep the meat tender.
  7. Sprinkle chopped fresh parsley over the lobster tails and serve immediately with lemon wedges.

Notes

Butterflying the lobster tails helps the garlic butter seep into the meat and ensures even cooking. Keep the heat low when melting butter to avoid burning garlic. Baste lobster every 2-3 minutes to keep it juicy. Rest briefly after cooking to redistribute juices. If broiler runs hot, adjust rack position or cooking time. For dairy-free, use vegan butter or olive oil spread. Lobster tails can also be grilled over medium heat for 8-10 minutes, turning and basting frequently.
