These Pumpkin White Chocolate Chip Cookies are the ultimate autumn treat, combining the cozy flavors of pumpkin and cinnamon with the indulgent sweetness of white chocolate.

Ingredients

Scale
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • ½ cup (120g) pumpkin puree
  • 1 cup (180g) white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking.
  2. In a medium-sized bowl, whisk together all-purpose flour, baking soda, salt, cinnamon, ground nutmeg, and ground ginger. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  4. Add egg yolks, vanilla extract, and pumpkin puree to the butter mixture. Beat until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  6. Gently stir in white chocolate chips using a spatula to ensure even distribution.
  7. Use a cookie scoop or a tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake the cookies for 10-12 minutes, or until the edges are set and the tops look slightly underbaked.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
