Refreshing Champagne Strawberry Popsicles

A crisp, bubbly, fruity summer treat combining fresh strawberries and champagne for a light and refreshing popsicle that’s perfect for hot days.

Ingredients

  • 2 cups fresh strawberries, hulled and quartered
  • 1 cup champagne or sparkling wine (dry or brut)
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon fresh lemon juice
  • Mint leaves (optional, a small handful, finely chopped)

Instructions

  1. Rinse and hull about 2 cups of fresh strawberries. Quarter them to help blend evenly.
  2. Add the strawberries to a blender along with 2 tablespoons of honey or agave syrup and 1 tablespoon of fresh lemon juice. Blend until smooth, about 30 seconds to 1 minute. For a seedless texture, strain the puree through a fine mesh sieve into a bowl.
  3. Gently stir in 1 cup (240 ml) of chilled champagne or sparkling wine. Avoid blending to keep the bubbles intact.
  4. If using, finely chop a small handful of fresh mint leaves and stir into the mixture.
  5. Pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and place molds flat in the freezer.
  6. Freeze for at least 4-6 hours, preferably overnight, until fully solid.
  7. To unmold, run warm water briefly over the outside of the molds and serve immediately for maximum fizz and freshness.

Notes

Use ripe, sweet strawberries for best flavor. Avoid blending after adding champagne to keep bubbles. Honey can be warmed if thick for easier mixing. Popsicles freeze softer due to alcohol; freeze longer if needed. For firmer popsicles, reduce champagne or add water/juice. Non-alcoholic version can use sparkling water or lemon-lime soda.
