Refreshing Champagne Strawberry Popsicles

A simple, festive summer treat combining fresh strawberries and bubbly champagne into easy-to-make popsicles that are perfect for cooling off on hot days.

Ingredients

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 cup (240 ml) brut or extra dry champagne
  • 23 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) water (optional, to thin mixture)
  • Fresh mint leaves (optional, for garnish or infusion)

Instructions

  1. Rinse and hull 1 1/2 cups of fresh strawberries. Slice into halves or quarters.
  2. Place strawberries, 2 tablespoons sugar, and 1 tablespoon lemon juice in a blender. Blend until smooth and vibrant red. For seedless texture, strain through a fine mesh sieve.
  3. Gently stir in 1 cup chilled brut champagne. Do not blend to preserve bubbles. Add up to 1/4 cup cold water if mixture is too thick.
  4. Pour mixture into popsicle molds, leaving about 1/4-inch space at the top. Insert sticks if molds don’t have built-in handles.
  5. Freeze molds upright for at least 4 hours or overnight for best texture.
  6. To unmold, run warm water over the outside of molds for 10-15 seconds and gently pull sticks. Serve immediately.

Notes

Do not blend champagne to preserve bubbles. Use ripe but not overripe strawberries. Leave space in molds for expansion. Let popsicles sit at room temperature for 5 minutes before serving if too hard. For non-alcoholic version, substitute champagne with sparkling water and a splash of grape juice.
