These savory bacon cheeseburger sliders feature juicy beef patties, crispy bacon, melted cheddar, and a tangy homemade special sauce, perfect for quick game nights or casual parties.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20)
  • 68 slices bacon, cooked crisp
  • 6 slices cheddar cheese (sharp or mild)
  • 6 small slider buns, soft but sturdy
  • ½ cup (120ml) mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon finely chopped pickle relish
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons butter, melted

Instructions

  1. Cook the bacon: Place 6-8 strips of bacon in a cold skillet, then turn heat to medium. Cook until crispy, about 8-10 minutes, flipping occasionally. Transfer to paper towels to drain.
  2. Prepare the special sauce: In a mixing bowl, combine ½ cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon Dijon mustard, 1 tablespoon finely chopped pickle relish, ½ teaspoon garlic powder, and ½ teaspoon onion powder. Stir until smooth and set aside.
  3. Form the patties: Divide 1 pound ground beef into 6 equal portions (about 3 oz or 85g each). Shape each into a small patty slightly larger than the slider buns (about 3 inches diameter). Season both sides with salt and pepper.
  4. Cook the patties: Heat skillet over medium-high heat. Cook patties 3-4 minutes on first side without moving. Flip and cook another 3 minutes. Place a slice of cheddar on each patty, cover pan, and cook 1 more minute until cheese melts.
  5. Toast the buns: Preheat oven to 350°F (175°C). Place slider buns cut side up on a baking sheet, brush with melted butter, and toast about 5 minutes until golden and slightly crisp.
  6. Assemble the sliders: Spread a generous spoonful of special sauce on bottom bun, add cheesy patty, then a strip of crispy bacon. Top with bun crown and press gently to hold together.
  7. Serve immediately while warm.

Notes

For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, substitute vegan cheese and plant-based mayo. Avoid overworking the meat to keep patties juicy. Special sauce can be made ahead and stored up to 3 days in fridge. Rest patties after cooking for juiciness.
