  • 1 pound thinly sliced roast beef (deli-style or leftover roast)
  • Provolone cheese slices (or Swiss cheese)
  • 2 tablespoons unsalted butter, softened (for toasting buns)
  • Horseradish sauce (optional)
  • 3 cups beef broth (low sodium preferred)
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh or dried thyme
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • 1 tablespoon olive oil or butter (for sautéing)

Instructions

  1. Heat 1 tablespoon olive oil or butter in a medium saucepan over medium heat. Add thinly sliced onion and cook 5-7 minutes until caramelized and golden brown, stirring occasionally.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add 3 cups beef broth, 1 tablespoon Worcestershire sauce, 1 teaspoon thyme, freshly ground black pepper, and a pinch of salt. Bring to a gentle simmer, reduce heat to low, and simmer 10-15 minutes, stirring occasionally. Adjust seasoning to taste.
  4. Preheat a large skillet over medium heat. Spread softened butter on cut sides of slider buns. Toast buns butter-side down until golden brown and slightly crispy, about 2-3 minutes. Remove and set aside.
  5. Assemble sliders by layering about 2 ounces thinly sliced roast beef on the bottom half of each toasted bun. Top with a slice of provolone cheese. Spread horseradish sauce on the inside of the top bun if using.
  6. Place assembled sliders back in the warm skillet, cover with lid or foil, and warm for 2-3 minutes until cheese melts slightly and beef is warmed through.
  7. Serve sliders warm with hot au jus in small bowls for dipping.

Use quality beef broth for richer flavor. For gluten-free, use gluten-free buns and Worcestershire sauce alternatives. Caramelize onions slowly for best depth of flavor. Avoid over-toasting buns to prevent bitterness. Au jus can be made ahead and reheated.
