These sliders combine smoky bacon, tender turkey, and a rich homemade Mornay cheese sauce on buttery slider buns, perfect for Kentucky Derby parties or casual gatherings.

  • 8 slices thick-cut bacon
  • Sliced deli turkey breast (low-sodium preferred)
  • 1 ½ cups shredded sharp cheddar cheese
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Tomato slices (optional)
  • Fresh chopped parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels and reserve some bacon fat for toasting buns.
  2. In a medium saucepan, melt 3 tablespoons unsalted butter over medium heat. Whisk in 3 tablespoons all-purpose flour and cook for 2 minutes, stirring constantly.
  3. Gradually whisk in 2 cups whole milk, a little at a time, to avoid lumps. Continue whisking until sauce thickens and coats the back of a spoon, about 5-7 minutes.
  4. Remove from heat and stir in 1 ½ cups shredded sharp cheddar cheese until melted and smooth. Add 1 teaspoon Dijon mustard and season with salt and pepper to taste.
  5. Slice slider buns in half. Lightly brush cut sides with reserved bacon fat or melted butter and toast in a hot skillet or oven until golden, about 3 minutes.
  6. Layer 2 slices of turkey breast on the bottom halves of the buns. Add a slice of tomato if using.
  7. Spoon a generous amount of warm Mornay sauce over each slider, then top with a piece of crispy bacon. Close with the toasted bun top.
  8. Arrange sliders on a baking sheet and bake in a preheated oven at 350°F (175°C) for 5-7 minutes to warm through and meld flavors.
  9. Garnish with chopped fresh parsley and serve warm.

Notes

If sauce is too thick, whisk in a splash more milk; if too thin, cook longer while stirring. Toast buns to prevent sogginess. Use freshly shredded cheese for smooth sauce. Save bacon fat for toasting buns for extra flavor.
