Instructions

  1. Heat 2 tablespoons of unsalted butter in a large skillet over medium heat. Add the thinly sliced yellow onions and a pinch of salt. Stir occasionally as the onions soften and start to turn golden, about 10 minutes.
  2. Pour in 1 cup (240ml) of Guinness stout. Stir well and reduce the heat to low. Let the onions simmer gently, stirring every few minutes, until the liquid mostly evaporates and the onions are deeply caramelized and tender, about 15-20 minutes.
  3. In a mixing bowl, combine 1 pound (450g) of ground beef with 1 tablespoon (15ml) Worcestershire sauce, salt, and black pepper to taste. Mix gently to avoid tough patties.
  4. Divide the beef into 8 equal portions and gently form into small patties about 3 inches (7.5cm) in diameter and ½ inch (1.3cm) thick. Make a small indentation in the center of each patty with your thumb to prevent puffing during cooking.
  5. Heat a cast-iron skillet or grill pan over medium-high heat until hot. Cook patties for 3-4 minutes per side for medium doneness (internal temperature 160°F/71°C), or longer if desired. If using cheese, place a slice on each patty during the last minute of cooking to melt.
  6. Lightly butter the slider buns and toast them cut-side down in a clean skillet or on a griddle until golden and crisp, about 2 minutes (optional).
  7. Assemble the sliders by spreading Dijon or Irish brown mustard on the bottom bun, adding the beef patty with melted cheese, topping generously with the Guinness onions, and capping with the top bun. Serve immediately.
