  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) fresh or frozen corn kernels (thawed if frozen)
  • 1 small red bell pepper, finely diced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh cilantro, chopped
  • 1 ½ cups (340 g) sour cream or plain Greek yogurt
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 avocado, diced or mashed
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (50 g) shredded lettuce or chopped romaine
  • Optional: sliced black olives or jalapeños to taste

Instructions

  1. Prepare the Black Bean & Corn Mix: In a large mixing bowl, combine the rinsed black beans and corn kernels. Add the diced red bell pepper, chopped red onion, and minced garlic. Sprinkle in the cumin, chili powder, salt, and pepper. Squeeze the lime juice over everything and stir gently until well mixed. Fold in the chopped cilantro last to keep it fresh. Taste and adjust seasoning.
  2. Layer the Base: In your serving bowl, spread the sour cream or Greek yogurt evenly as the first layer.
  3. Add the Black Bean & Corn Mix: Spoon the prepared bean and corn mixture over the sour cream layer, spreading it evenly.
  4. Layer the Cheese: Sprinkle the shredded sharp cheddar cheese evenly over the black bean mix.
  5. Add the Avocado: Spread the diced or mashed avocado in a smooth layer on top of the cheese. If mashing, add a little lime juice to prevent browning.
  6. Top with Fresh Veggies: Distribute the halved cherry tomatoes and shredded lettuce over the avocado layer. Add optional sliced olives or jalapeños if desired.
  7. Chill & Serve: Cover the bowl with plastic wrap and refrigerate for at least 10 minutes to let the flavors meld. Before serving, gently pat the top to keep layers intact.

Notes

Rinse canned beans thoroughly to remove excess sodium and avoid canned taste. Dry beans and corn well to prevent watery layers. Add avocado last and just before serving to avoid browning. For a smoky flavor, add smoked paprika to the black bean mix. Use small-curd black beans for better texture. Can be made vegan by substituting sour cream with coconut or cashew yogurt and using vegan cheese or omitting cheese.
