  • 1 tablespoon almond flour
  • 1 tablespoon oats (rolled or quick oats, gluten-free if needed)
  • 1 tablespoon nut butter (peanut butter or almond butter)
  • 12 teaspoons milk or milk alternative (almond milk, oat milk, or regular milk)
  • 1 teaspoon sweetener (maple syrup, honey, or sugar-free option like stevia or monk fruit)
  • 1 teaspoon chocolate chips (semi-sweet, dark, or sugar-free)
  • Pinch of baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine 2 tablespoons of protein powder, 1 tablespoon of almond flour, 1 tablespoon of oats, a pinch of baking powder, and a pinch of salt.
  3. Stir in 1 tablespoon of nut butter, 1 teaspoon of sweetener, and 1-2 teaspoons of milk. Mix until the dough comes together. Add a splash more milk if the dough feels too dry.
  4. Gently mix in 1 teaspoon of chocolate chips.
  5. Form the dough into a ball and place it on the prepared baking sheet. Flatten slightly into a cookie shape.
  6. Bake for 8-10 minutes, or until the edges are lightly golden.
  7. Let the cookie cool for a few minutes before enjoying.
