  • 1/2 cup freeze-dried strawberries, crushed

  • 1/4 cup almond flour (or oat flour for nut-free)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1/4 cup white chocolate chips
  • Optional: 1 tablespoon chia seeds or flaxseed meal

Instructions

  1. Add rolled oats and cottage cheese to a food processor or blender.
  2. Blend for 30-45 seconds until mostly smooth and creamy with a bit of texture.
  3. Transfer the mixture to a mixing bowl.
  4. Add vanilla protein powder, crushed freeze-dried strawberries, honey or maple syrup, almond flour, vanilla extract, and a pinch of salt.
  5. Stir well with a spatula or spoon until fully combined and no dry spots remain.
  6. If the dough is sticky, let it sit for 5 minutes; add more almond flour if needed, or a splash of milk if too dry.
  7. Portion out 1-tablespoon scoops and roll between your hands to form balls (about 14-16 balls).
  8. Optional: Roll balls in extra crushed freeze-dried strawberries or oat flour.
  9. Place balls on a parchment-lined baking sheet or plate.
  10. Chill in the fridge for at least 30 minutes to firm up.
  11. Transfer to an airtight container and store in the fridge for up to 5 days or freeze for up to 2 months.

Notes

For gluten-free, use certified gluten-free oats and oat flour. For dairy-free, swap cottage cheese for thick coconut yogurt and use plant-based protein powder. Adjust sweetness and texture as needed.
