  • 8 oz (225 g) cream cheese, softened (full-fat recommended)
  • 1/3 cup (65 g) granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup (150 g) fresh strawberries, finely chopped
  • 1 tbsp lemon juice
  • Optional toppings: powdered sugar for dusting, strawberry glaze or jam warmed and drizzled

Instructions

  1. Using a sharp paring knife, carefully slice off the top third of each donut horizontally. Gently hollow out the inside by removing some of the dough, creating space for the filling. Be careful not to poke through the bottom. Set aside the tops for later.
  2. In a medium mixing bowl, combine the softened cream cheese and granulated sugar. Using a hand mixer on medium speed, whip until smooth and creamy—about 2-3 minutes. Add the vanilla extract and lemon juice, mixing just until incorporated.
  3. Fold the finely chopped strawberries into the cream cheese mixture gently. If the berries are too juicy, drain any excess liquid before mixing to avoid a watery filling.
  4. Using a spoon or piping bag, fill each hollowed donut base generously with the strawberry cheesecake filling.
  5. Carefully place the reserved donut tops back on each filled donut, pressing lightly to secure but not squish the filling out.
  6. Optionally, dust the donuts with powdered sugar or drizzle with warmed strawberry jam for extra sweetness and shine.
  7. Serve fresh or refrigerate in an airtight container for up to 2 days. Let come to room temperature before serving.

Notes

Use full-fat cream cheese for best creaminess. If using frozen strawberries, thaw and drain excess liquid to avoid watery filling. Softened cream cheese whips better. Hollow donuts gently to avoid breaking. Store filled donuts refrigerated up to 2 days and bring to room temperature before serving. For dairy-free, use plant-based cream cheese and donuts. Cake donuts provide denser texture; yeast donuts are lighter.
