  • 2 tablespoons honey
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • 1/2 teaspoon sea salt, or to taste
  • Freshly ground black pepper, a few twists

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into 1/4-inch (about 6 mm) thick rounds, keeping them uniform.
  3. Toss the sweet potato rounds in a mixing bowl with olive oil, sea salt, and freshly ground black pepper until lightly and evenly coated.
  4. Arrange the rounds in a single layer on a parchment-lined rimmed baking sheet, avoiding overcrowding.
  5. Roast in the oven for 20-25 minutes, flipping the rounds halfway through (around 12 minutes), until edges are caramelized and tender.
  6. Remove from oven and let cool for about 5 minutes.
  7. Spread about 1 tablespoon (15 grams) of softened goat cheese on each round. If desired, stir fresh thyme into the goat cheese before spreading.
  8. Drizzle honey over each round just before serving.
