  • Salt and pepper to taste
  • 1 cup (240 ml) sour cream (full fat or light)
  • 1 cup (240 ml) guacamole
  • 1 cup (240 ml) salsa (medium or chunky style)
  • 1 cup (120 g) shredded sharp cheddar cheese
  • ½ cup (50 g) chopped green onions
  • ½ cup (15 g) chopped fresh cilantro
  • 1 medium ripe avocado, diced (optional)
  • Tortilla chips or fresh vegetable sticks (carrots, cucumber, bell peppers) for serving

Instructions

  1. Drain and rinse the black beans well. If using frozen corn, thaw slightly or use fresh corn kernels.
  2. In a large bowl, combine black beans, corn, diced red bell pepper, chopped red onion, lime juice, and cumin. Stir gently to mix evenly. Season with salt and pepper. Set aside.
  3. In a small bowl, stir sour cream until smooth. Add a pinch of salt and about ½ teaspoon lime juice for zest.
  4. In your serving bowl, spread the sour cream evenly as the first layer.
  5. Carefully spoon the black bean and corn mix evenly over the sour cream layer.
  6. Gently spread guacamole over the black bean and corn layer, then top with salsa. Optionally, mix a teaspoon of lime juice into the salsa before adding.
  7. Sprinkle shredded cheddar cheese over the salsa layer.
  8. Top with chopped green onions, fresh cilantro, and diced avocado if using.
