  • 1 large bag (about 12 oz) sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup fresh salsa or pico de gallo
  • ½ cup sour cream
  • 1 ripe avocado, mashed or guacamole
  • 1 small red onion, finely diced
  • 12 jalapeños, thinly sliced (optional)
  • Fresh cilantro leaves for garnish
  • 1 lime, cut into wedges

Instructions

  1. In a medium bowl, toss the thinly sliced flank steak with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Let it marinate for at least 10 minutes at room temperature.
  2. Heat a large skillet over medium-high heat until very hot. Add the steak strips in a single layer and cook for 2-3 minutes per side until browned but still juicy. Remove from heat and set aside.
  3. Preheat oven to 375°F (190°C). Spread tortilla chips evenly on a large baking sheet or oven-safe platter.
  4. Sprinkle shredded cheddar and Monterey Jack cheeses generously over the chips.
  5. Scatter the cooked steak strips evenly over the cheesy chips.
  6. Bake for 7-10 minutes until cheese is melted and bubbly, watching carefully to avoid burning.
  7. Remove from oven and dollop spoonfuls of salsa and sour cream across the top.
  8. Spread mashed avocado or guacamole in small mounds over the nachos.
  9. Sprinkle diced red onion, sliced jalapeños (if using), and fresh cilantro leaves over everything.
  10. Serve immediately with lime wedges on the side.
