  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/2 cup (115g) vegan butter, unsalted
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1/3 cup (75g) pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat vegan butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
  4. Mix in pumpkin puree and vanilla extract. Beat until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Use a cookie scoop or spoon to form balls of dough. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-14 minutes, or until the edges are set but the centers are soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
