A quick and easy 5-minute salad featuring crisp green beans, juicy tomatoes, and tangy feta cheese, perfect for a fresh and flavorful side dish.

  • 1 pound green beans, trimmed and blanched
  • 1 pint cherry or grape tomatoes, halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh basil or parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 small garlic clove, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Wash and trim 1 pound of green beans. Bring a medium pot of salted water to a boil.
  2. Add the green beans and blanch for 2-3 minutes until bright green and tender-crisp.
  3. Immediately transfer the green beans to a bowl of ice water to stop cooking. Drain well and set aside.
  4. Halve 1 pint of cherry or grape tomatoes. Alternatively, dice 2 medium vine-ripened tomatoes.
  5. Thinly slice 1/4 cup red onion and chop 2 tablespoons fresh basil or parsley. Mince 1 small garlic clove if using.
  6. In a small bowl, whisk together 3 tablespoons extra virgin olive oil, juice of 1 lemon, minced garlic, salt, and pepper.
  7. In a large mixing bowl, combine the blanched green beans, tomatoes, sliced onion, and herbs.
  8. Pour the dressing over the salad and toss gently to coat evenly.
  9. Crumble 4 ounces of feta cheese over the salad and toss gently again.
  10. Let the salad rest at room temperature for 10-15 minutes before serving to allow flavors to meld.

Notes

Blanch green beans until tender-crisp and immediately shock in ice water to preserve color and crunch. Use ripe cherry or grape tomatoes for best flavor. Toss gently with feta to avoid mushy cheese. Let salad rest 10-15 minutes before serving for flavors to meld. Store leftovers in an airtight container for up to 2 days; add fresh feta before serving.
