  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander

  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon lemon juice
  • 1 teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil or mustard oil
  • A handful fresh cilantro, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the cauliflower thoroughly, then cut into evenly sized florets about 1 to 1.5 inches each.
  3. Toast the cumin seeds in a dry skillet over medium heat until fragrant and slightly darker, about 1-2 minutes.
  4. In a large mixing bowl, combine toasted cumin seeds, turmeric powder, ground coriander, red chili powder, garam masala (if using), salt, and black pepper.
  5. Add minced garlic and grated ginger to the spice mix and stir well.
  6. Drizzle olive or mustard oil over the cauliflower florets, then sprinkle the spice mixture on top. Toss until cauliflower is evenly coated and golden.
  7. Spread the cauliflower in a single layer on a baking sheet to avoid overcrowding.
  8. Roast in the oven for 20-25 minutes, flipping halfway through, until edges are golden brown and cauliflower is tender.
  9. Remove from oven and immediately squeeze fresh lemon juice over the cauliflower and sprinkle with chopped cilantro.
  10. Serve warm or at room temperature.
