  • 2 pounds purple sweet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup heavy cream or half-and-half, warmed
  • 1 clove garlic, minced (optional)
  • 1 teaspoon fresh rosemary, finely chopped (or thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon maple syrup or honey (optional)

Instructions

  1. Peel and cube about 2 pounds of purple sweet potatoes into roughly 1-inch pieces.
  2. Fill a large pot with about 1 inch of water and bring to a boil. Place the cubed potatoes in a steamer basket over the boiling water, cover, and steam for 15-20 minutes until tender when pierced with a fork.
  3. While potatoes cook, gently warm 1/4 cup of heavy cream and soften 4 tablespoons of unsalted butter.
  4. Transfer the steamed potatoes to a large mixing bowl. Use a potato masher or fork to mash them until mostly smooth but still a little rustic.
  5. Stir in the softened butter, warmed cream, minced garlic (if using), chopped rosemary, salt, black pepper, and maple syrup or honey (if using). Mix gently until combined and creamy.
  6. Taste and adjust seasoning with more salt or pepper if needed. Add a splash more cream if the mash is too thick.
  7. Transfer to a serving dish, garnish with extra rosemary or a pat of butter if desired, and serve warm.

Notes

Steam the potatoes instead of boiling to preserve the vibrant purple color and nutrients. Avoid over-mashing to prevent gluey texture. Warm the cream and butter before mixing to keep the mash silky and warm. For vegan version, substitute butter with coconut oil or vegan margarine and use coconut or almond milk instead of cream.
