  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the chicken: If starting with raw chicken, season with salt, pepper, and oregano, then grill or pan-fry until fully cooked (6-8 minutes per side). Let cool and shred or dice.
  2. Prepare the dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic, salt, and pepper. Adjust seasoning as needed.
  3. Chop the veggies: Dice cucumbers, halve cherry tomatoes, slice red onion, and chop romaine lettuce. Add to a large mixing bowl.
  4. Combine the salad ingredients: Add cooked chicken, Kalamata olives, and crumbled feta to the bowl with the veggies.
  5. Toss with dressing: Pour the dressing over the salad and toss gently with tongs to coat evenly.
  6. Serve: Transfer to a serving platter or individual plates. Garnish with extra feta if desired.
