A vibrant, tangy, and crunchy Texas caviar dip that’s perfect for parties and quick snacks. Loaded with black-eyed peas, black beans, fresh veggies, and a zesty homemade vinaigrette.

  • 1 can black-eyed peas, drained and rinsed
  • 1 can black beans, rinsed
  • 1 cup fresh tomatoes, diced (preferably Roma)
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup green onions, thinly sliced
  • 1 jalapeño pepper, seeded and minced (adjust for spice preference)
  • 1/4 cup fresh cilantro, chopped
  • 2 garlic cloves, minced
  • 1/4 cup red onion, finely diced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the canned black-eyed peas and black beans thoroughly. Dice the tomatoes, red onion, and red bell pepper into small, even pieces. Mince the garlic and jalapeño (removing seeds if you prefer less heat). Slice the green onions and chop the cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, apple cider vinegar, and honey or agave syrup. Add ground cumin, chili powder, salt, and black pepper. Whisk until the honey dissolves and the dressing is smooth.
  3. In a large mixing bowl, combine black-eyed peas, black beans, tomatoes, red onion, bell pepper, jalapeño, green onions, garlic, and cilantro. Pour the dressing over and toss gently but thoroughly to coat everything evenly.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour or up to overnight to let the flavors meld.
  5. Before serving, stir the dip and adjust seasoning with additional salt, pepper, or lime juice if needed. Serve chilled or at room temperature with tortilla chips, crackers, or fresh veggies.

Notes

Letting the dip chill for at least an hour enhances the flavors. Adjust jalapeño quantity for desired spice level. If dip seems dry after chilling, add a splash more olive oil or lime juice. For a vegan version, substitute honey with agave or maple syrup. Uniform chopping ensures balanced bites. Can be served with tortilla chips, pita wedges, fresh veggies, or as a topping for grilled meats or tacos.
