  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder (preferably Dutch-processed)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet or dark chocolate chips, melted
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Stir in the melted chocolate chips until the dough is rich and chocolatey.
  7. Take one marshmallow and flatten it slightly by hand.
  8. Scoop about 2 tablespoons of dough and flatten it slightly in your hand. Place a marshmallow in the center, then wrap and seal the dough around it completely to form a ball.
  9. Place the cookie dough balls on the prepared baking sheets, leaving about 2 inches between each one.
  10. Bake for 10-12 minutes, or until the edges look set but the centers are soft.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack. Enjoy warm for maximum gooeyness!
